Healthy By Choice – Facing Reality

Well, the day finally came where I had to face reality.  I’ve been in denial for a long time.  My cholesterol and sugar counts have been through the roof, and I don’t like to take medication, so I have tried to handle the situation by watching my diet.  The problem is, I love to eat and I am faced with so many temptations every day.  I eat to celebrate, I eat out with friends, I eat when I’m stressed and I eat just because the food is there. And it always seems to be there.  I’m just a girl who can’t say no, what can I say???  

After my last checkup, I received a wake up call.  Changing my diet is no longer an option, it is a necessity.  I have to exercise and eat healthy or my health will become noticeably worse.  Before, I thought I should do something to be more healthy, now I know I have to do it.  

Three years ago I wrote a blog called “Eating Healthy Every Day in the Merry Merry Month of May.”  I ate healthy for an entire month and it was fun coming up with creative ideas and sharing my experiences.  But it was temporary, it had a time limit.  The next day after the Merry Month of May – June 1 – I went to a party and…let’s just say I really made up for lost time.  

During that month in May of 2011, I shared recipes, temptations, frustrations, victories, ideas and encouragement.  Many people said that the blog was helpful to them, and it was fun to do, so I am going to try it again.  This time there will not be a time limit.  I plan on practicing healthy habits for the rest of my life.  Will I succeed every day?  Probably not.  In fact, I’m sure I won’t!  I DO live in New Orleans after all.  But I’m going to try. 

I have some new ideas and insights to share, as well as some information provided by friends who have gone the whole hog (pardon the pun) and are eating really healthy things like juiced vegetables and 100% organic food.  I’m not there yet, we shall see if I ever get that far.  I just want to try to eat healthy right now with what I have. 

I am a very frugal person (by necessity),  and I have very little spare time.  So I hope to share ideas about how we can eat healthy frugally and with minimal fuss.  Every week I will purchase various fresh items and concoct different recipes during the week using the items I buy.  (At the bottom of this page there is a list of items I bought for this week).  

I am calling this Blog “Healthy By Choice.”  I do not want to be reminded that I am eating healthy out of necessity.  Instead, I want to focus on the positive.  I’m eating healthy and exercising so I will look and feel better.  That’s my choice. 

So, here we go with week 1, Day 1 of living Healthy By Choice

Dinner tonight was DELICIOUS!  I saw a similar recipe on Facebook which gave me the idea, but I lost the recipe so I used the items I had on hand. 


Zucchini beforeCut 3 zucchinis into long halves, and toss with fresh parsley and fresh basil (I happen to have those plants, but use whatever fresh herbs you like) and 1 tbsp of Olive Oil.  Lay the zucchini strips skin side down in a glass baking dish, and sprinkle with fresh Parmesan cheese. Bake at 400 for 20 minutes. 

Not only did this taste good, it smelled fantastic while it was baking.
